This sweet cornbread recipe couldn’t be simpler! It is made with only three ingredients including creamed corn which makes it super dense, moist, soft, and the perfect cornbread recipe to be paired with soup on a cold winter day.

Soft & Thick Sweet Corn Bread Recipe (1) I didn’t grow up eating soup. We occasionally had stew or chili, but it wasn’t until much later in life I first had a bowl of creamy tomato basil and fell head over heels in love with soup! Since that moment, it has been my mission to find and make all of the best flavors of soup out there.

When it is cold outside, soup is kind of the perfect food. It is warm, filling, and can incorporate so many delicious flavors. And of course every mom’s favorite part, it only dirties up one bowl!

I have shared may soup recipes with you here, but I will be the first one to tell you that when things get crazy, using premade soup can be a PERFECT time saving and delicious solution. This is especially true forCampbell’s new productslike theCampbell’s® Slow Kettle® soup. This isn’t the same old soup in a can, but it is filled with really special, top shelf ingredients and flavors created by real chefs. I am talking ingredients like angus beef, fresh cream, Andouille sausage, Portobello mushrooms, asiago cheese, & Madeira wine. Kind of makes me drool a little just thinking about it! We had theAndouille Sausage Jambalaya with Chicken & Ham Soup as a part of our dinner on a busy weeknight this past week and WOW. My husband’s exact words were “it’s zesty!” It has the just a hint of spice in the sausage and the flavors balance perfectly with the vegetables, three kinds of meat and rich tomato base. It sure didn’t taste like a hectic weeknight!

Of course nothing pairs better with jambalaya than sweet cornbread and we have a heck of a recipe for one that we love. It is like the trifecta. Super easy. Super thick. Super soft. I am a little bit of a bread snob, and a lot of times I won’t even eat cornbread because if it is dry and crumbly, it just isn’t even worth it to me. But this my friends… this is epic cornbread. It is dense and rich and moist with just the perfect amount of sweetness and just everything cornbread should be.

Soft & Thick Sweet Corn Bread Recipe (3)

So when I said easy, it was no joke. This recipe has just three ingredients and is pretty much fool proof! All you need is 2 boxes of cornbread mix, 2 eggs, and one can of creamed corn. If you like it a bit sweeter you can add a touch more sugar to taste. And that is it. Just pour it in a bowl, mix it up and you are ready to pop it in a pan and into the oven it goes.

The creamed corn is the secret ingredient and what makes the cornbread the super soft, dense and rich in the best way. It is everything you never knew you were dreaming of in corn bread. Keep the recipe handy because you will be asked for it!

I use a 2 qt rectangular pyrex dish to bake this recipe in and it takes right at 30 minutes to cook at 350F, so that it is set all the way through. If you like super thick cornbread, you can do this recipe in an 8×8 or 9×9 square dish and adjust for a longer cooking time. You can also get 12 muffins out of the recipe if you prefer them that way. I usually bake them 12-15 minutes for muffins.

FAQs

What does adding an extra egg to cornbread do? ›

Eggs are responsible for giving baked goods structure, which means the amount you use directly affects the resulting texture. Using too few eggs will make your desserts dense, but using too many will make them rubbery.

How do I make sure my cornbread is moist? ›

Melted butter and thick buttermilk keep this cornbread moist. After baking, I like to run a stick of butter over the top of the hot cornbread so that it soaks right in and stays even more moist and buttery.

What is the best cornmeal for cornbread? ›

As for the best cornmeal for cornbread, either fine- or medium-grind cornmeal is a great choice. Medium-grind cornmeal will bring slightly more texture and grittiness to the batter, which you may or may not want (it's up to you!). You can use fine or medium cornmeal in these extra corny muffins.

How do I keep my cornbread from falling apart? ›

Add shredded cheese.

Melty, gooey cheese will hold your cornbread together and give it a fantastic flavor. Shredded cheddar cheese is best for most cornbread recipes, but you can try experimenting with another variety.

Can you put too many eggs in cornbread? ›

If there isn't enough egg, your batter or dough may not be able to hold its structure or could end up overly dry or dense. On the other hand, if there is too much egg, your baked goods could lose their shape due to excess liquid, or have a rubbery (or even overly cakey) texture depending on the recipe.

How can I thicken my cornbread? ›

If you've added too much milk to your muffin or pancake batter, the best method for thickening it is to add a bit more flour. You can use all-purpose flour or the same type of flour you used in the original recipe. You can also use a bit of cornstarch or a mixture of cornstarch and flour.

Why is my cornbread dense and heavy? ›

Why is my cornbread dense? If you overmixed your batter or over-measured your flour, your buttermilk cornbread could turn out dense. Be gentle with your batter and make sure you know how to properly measure flour.

Is cornbread better with milk or water? ›

Can I substitute water for milk in cornbread mix? Yes, you can, but it may result in a less rich flavor. If you're out of milk, try using cream or half-and-half, evaporated or powdered milk, or even plain yogurt. If you have dietary restrictions, try soy milk or oat milk.

What is the difference between cornbread and Southern cornbread? ›

She notes that Northern cornbread is sweeter, lighter, and more cake-like than Southern cornbread. Not surprisingly, it includes sugar (or molasses, in the earlier centuries), unlike traditional Southern cornbread.

What is the difference between Yankee cornbread and Southern cornbread? ›

The thing that distinguishes Southern cornbread from, say Yankee cornbread, or any other cornbread one is likely to eat outside of the southern states, is that it is savory, not sweet, and it is made mostly with cornmeal.

What is the difference between New York cornbread and southern cornbread? ›

Southern cornbread has traditionally been made with little or no sugar and smaller amounts of flour (or no flour), with northern cornbread being sweeter and more cake-like. Southern cornbread traditionally used white cornmeal and buttermilk. Other ingredients such as pork rinds are sometimes used.

Should you let cornbread batter sit? ›

Note: We recommend allowing cornbread batter to sit for 10 to 15 minutes before baking, so if you prefer, you can delay heating the oven until you make the batter.

Should you soak cornmeal before making cornbread? ›

Soaking the cornmeal in buttermilk for a few hours, or even overnight, tenderizes the large grains of cornmeal, making the bread more moist and tender. This step is optional, however, and the bread is still delicious without the soaking step.

Why is my cornbread so thick? ›

Over mixing will make it denser - think of cake that is lightly mixed, has low gluten flour and is therefore fluffier. Cornbread is quite a bit different then all-wheat breads and pastries. It has a low flour content, so the overall gluten levels will be quite a bit lower then cake flour.

What happens if you add an extra egg? ›

Adding too many eggs may not be a good thing

As explained by The Cake Blog, using too few eggs means that your cake won't hold together well, but using too many will result in a cake that is more dense, spongy, and rubbery than the lightweight cake that it should be.

How does an extra egg affect baking? ›

Eggs also contain a variety of proteins that create the structure of a cake, and when beaten, they can act as a leavening agent by adding air to the cake batter. However, if you add too many eggs to your cake batter, then your end result could be spongy, rubbery, or dense.

What does adding more egg do in baking? ›

Eggs are a crucial ingredient. They provide the cakes with the structure to hold light bubbles. Eggs also give the batter additional, richer flavor from the yolk fat. If you add too many eggs, you'll have “pancakes” that look more like custard or crepes.

What makes cornbread rise more? ›

The air spaces are created by bubbles of gas (mostly carbon dioxide) produced within the batter during the baking process. Ingredients that produce these bubbles are called leavening agents. In "quick breads," which have no yeast (and don't require hours for dough to rise), the leavening agent is usually baking powder.
