Homemade Scones

I feel like scones sometimes get a bad rep. Or, at the very least, they don’t get the center stage as much as they should. Everyone loves muffins or danishes, but scones often get passed by. If you have been overlooking the scone, it is time to give them a second glance.

Scones have the perfect balance of savory and sweet. They are slightly saltier than a muffin and a little less sweet, which makes them a perfect companion for a cup of tea or coffee, whether it is your first morning cup or a sweet treat after dinner.

Below, I have broken down the recipe so you can make the scone mix recipe and keep it in a clean mason jar until you’re ready to use it. Then, just add in a couple more ingredients, and you are ready to bake up a delicious batch of fresh scones!

Ingredients for Scone Mix

  • Sugar. Regular sugar is needed in this recipe to give the scones some flavor. I’ve not tried this recipe with a sugar alternative.
  • Flour. You want a good all-purpose flour for this recipe, and you could also try gluten-free flour if you want to make this recipe gluten-free.
  • Baking Powder. You need quite a bit for this recipe, so I recommend buying it in bulk!
  • Salt. I use Pink Salt for all my recipes because I keep it on hand. I buy it in bulk here.
  • Lemon or orange zest. What you use will depend on the flavor that you are going for. You might not need any zest if you make savory scones.
  • Blueberries, strawberries, or dried cranberries. If you don’t want to do any of these, check out the more extensive list of scone mix add-ins below.
  • Heavy Cream. A whole fat is needed to give these scones their flavor. You can also use lard, butter, or shortening if that’s what you have.

FAQs to Know on Making Homemade Scones

What is the secret to making good scones?

The secret to making a good scone comes from what you put in it…usually the fat ingredient. In this particular recipe, that would be the heavy cream.

Do you put egg in scone mix?

Traditionally you do not add egg to a scone recipe. The only exception I would say is that when you are making this recipe gluten free. Then I would add an egg to help act as a binder.

What can I add to scone mix to help it rise?

Baking powder is the ingredient in scone mix that helps it rise. Scones don’t really rise a lot so you really shouldn’t see too much of a lift but if you wanted even more, you could add a little baking soda or a little more baking powder.

How can I make Scone Mix dairy-free?

You can replace the heavy cream with full fat coconut cream OR with shortening in this recipe.

The basic recipe I have below has you adding strawberries, blueberries, and some lemon zest into the scones.

This is a great base recipe to give the scones some flavor but there are SO many other add-ins that you can put into scones!

Here are some ideas to replace the berries with and how to make some tasty flavor variations:

  • Dried Cherries
  • Your favorite flavor of jam. (This is an easy way to flavor scones and muffins! Just add some jam into the batter.)

Instructions for Making Scone Mix

This recipe makes enough mix for 4 batches of scones. Each batch makes 8-scone servings. Yielding a total of 32 scones from this mix.

In a large bowl, combine all dry ingredients and stir until well mixed.

Place the mixture in a container in your pantry and label as Homemade Scone Mix. You can place them in one large container and scoop out the amount needed for a batch each time or go ahead and portion the batches out into smaller containers.

When you are ready to make the scones:

Grease a baking sheet and preheat oven to 350 degrees.

In a large bowl, combine all ingredients and mix until ingredients are combined and incorporated. You can use forks or a pastry cutter to add in the heavy cream and make sure it’s evenly distributed.

Tip: Store your leftover Cream as Cream Cubesso you have it for your next batch of Scones!

Transfer your scone dough onto a clean lightly floured surface and gently pat and form into a round circle, about 1/4″ thick. Do not overwork the dough or you will lose any flaky layers.

Use a knife or a pizza cutter and cut the circle into 8 equal slices or wedges.* You can also form them into circles, similar to biscuits if you prefer.

Transfer the scone slices onto a greased or parchment paper lined baking sheet, leaving enough room for each piece to rise and bake for 35 – 40 minutes of bake time, or until golden brown and cooked through.

You could also serve with a variety of flavored glazes on top. Mix a little bit of powdered sugar with milk and add in a tsp of your favorite zest or extract to give the scone more flavor.

*If you have trouble with the texture of your dough and your dough crumbling, you can make them ahead of time and freeze them for 4 – 12 hours and they will hold together better. If you’ll be having your scones for breakfast, you can easily mix them up the night before and pop them in the freezer overnight. In the morning, pull them out and bake them for a delicious breakfast!

Tip: Make sure you label your DIY Scone Mix, I love to use these Free Printable Jar Labels.

FAQs

Can you make scone mixture the night before? ›

Option #1: Cover and store the butter and flour mixture in the fridge over night. In the morning, add the wet ingredients and cut the scones while the oven heats. Option #2: Follow the traditional method but instead of placing the baking sheet in the oven, pop the unbaked, cut scones into the freezer.

How do you use ready made scone mix? ›

Whisk together the scone mix, salt, and sugar. In a small mixing bowl or large measuring cup, whisk together the oil, milk, and egg. Add the wet ingredients to the dry mix, and stir just until the batter is evenly moist and thoroughly combined.

What is the secret to making scones rise? ›

To ensure taller scones, start with a thicker dough disc and place the scones on a tray with sides, allowing them to slightly touch one another. This arrangement encourages the scones to push against the pan and each other, promoting height.

Can you refrigerate unbaked scones overnight? ›

MAKE AHEAD

At this point the unbaked scones can be refrigerated overnight, or sealed and frozen for up to 1 month. If baking from frozen, add about 2 minutes to the baking time.

Can you make scones a day early and reheat them? ›

If you want to restore days-old scones to their fresh-baked glory, a quick reheat does the trick: To reheat scones, bake them for 5 to 10 minutes in a preheated 350°F oven.

Can you freeze uncooked scone mixture? ›

By freezing scone dough or biscuit dough prior to baking, several nice things happen. Freezing the dough prior to baking keeps the butter solid and firm, which helps create light and tender scones and biscuits.

Should scone mix be wet or dry? ›

The mix should be moist, and while it should come out of the mixing bowl clean, expect it to leave your fingers a little sticky. Scone mix is far wetter than a dough – it's somewhere between a batter and a dough. Only lightly flour your work surface to avoid incorporating extra flour into the dough.

Can you store scone mix? ›

Storing Unbaked Scone Mix

For unbaked scone mix, it should be kept in a cool, dry place to prevent any moisture from causing the ingredients to activate before baking.

What type of flour is best for scones? ›

The secret is using cake flour instead of all-purpose flour. It's lower in protein and makes for ultra-tender scones. If you don't have any on hand, you can easily make your own using all-purpose flour and cornstarch (see the FAQs below).

Should scone dough rest before baking? ›

The resting of the dough helps to relax the dough so everything remains tender, if you kneaded the dough and baked the scones immediately the insides would be great but the outsides would be tough and chewy.

What is the best temperature for baking scones? ›

I preheated the oven to 405 degrees (it runs hot so this is the setting that gives me 425 degrees). The scones came out of the freezer, were set onto a parchment lined cookie sheet, placed into the oven. I set timer for 18 minutes and moved on.

How thick should scone dough be? ›

It is far better that the scone mixture is on the wet side, sticking to your fingers, as the scones will rise better. Turn the dough onto a lightly floured surface and flatten it out with your hand, or use a rolling pin, to a thickness of 1-2 cm (1/2 – ¾ inch).

Should you sift flour for scones? ›

The less you knead the mix, the less the gluten will tighten up – which means your scones will stay loose and crumbly, rather than tight and springy. Make sure you sieve the flour and baking powder into your bowl. This means that the two will be well mixed together, which gives you a better chance of an even rise.

Why do you rub butter into flour for scones? ›

Why? When cold butter is rubbed into the flour, it creates flaky pockets of flavour (which soft, room temperature butter can't do). Once the cold butter and liquid (e.g milk) hits the oven, the water in the butter and cold liquid begins evaporating.

How do you keep scones fresh overnight? ›

Because scones should keep their lovely, flaky texture as long as possible, do not store them in an airtight container or a sealed bag. This could make them gummy. Wrap them separately in waxed paper, then put them in a container with the lid ajar, or cover them loosely with plastic wrap.

How do you store uncooked scone dough? ›

You may gently cover it with some plastic wrap or lay a sheet of parchment paper over the top. Do not press your covering layer into the dough–it will be fine left unwrapped, even overnight. Once the dough is firm, get a freezer safe bag and label the front with indelible marker.

Why are my scones dry the next day? ›

Don't overbake! If you bake scones too long, they'll dry out, so keep an eye on them through the oven window. (Don't open the oven to look — it'll let out the heat.) “Bake your scones until they are just golden brown,” Bethany recommends.
