Why Make Egg Noodles?

There are several reasons why making your own egg noodles is beneficial. Firstly, it allows you to control the quality of the ingredients. You can choose to use organic, free-range eggs and high-quality flour, resulting in a healthier and more flavorful noodle.

Secondly, making your own noodles can be a fun and rewarding experience to use up those excess eggs that chicken keepers are often loaded with in the spring. Making and storing enough noodles for the year is a great way to preserve the eggs for long-term use! Additionally, there’s something satisfying about creating something from scratch and being able to enjoy the fruits of your labor.

Finally, homemade egg noodles are often more affordable than store-bought varieties, especially if you’re making large batches.

Nutrition and Versatility of Egg Noodles

Egg noodles are a good source of carbohydrates and protein. They also contain vitamins and minerals such as thiamine, riboflavin, and iron. By making your own egg noodles, you can control the amount of salt and other seasonings, making them a healthy addition to your meals.

Egg noodles are also incredibly versatile. They can be used in a variety of dishes, from soups and stews to stir-fries and salads. They can be made thin or thick, short or long, and can be cut into a variety of shapes such as ribbons, spirals, or even stars. This versatility allows you to experiment with different recipes and create unique dishes that suit your tastes.

How to Store Egg Noodles Long Term

If you want to store your egg noodles long term, you can do so by drying them. Once the noodles are cut into the desired shape, lay them out on a baking sheet and let them air dry for a few hours or overnight. Alternatively, the noodles can be laid into a circular “nest” to dry and store. Once the noodles are completely dry, transfer them to an airtight container and store them in a cool, dry place. They should last for several months. A dehydrator should not be used to dry egg noodles because the low heat and constant air flow may cause the noodles to become brittle and break apart.

Equipment

  • KitchenAid Mixer

  • Dough Hook Attachment

  • Pasta Roller Attachment

  • Pasta Cutter Attachment

Ingredients

  • 2 Cups All-Purpose Flour organic, unbleached
  • 1/2 teas Salt
  • 3 large Eggs

Instructions

  • In the bowl of your KitchenAid mixer, combine the flour and salt. Add the eggs and mix on low speed until the dough comes together.

  • Once the dough has come together, switch to the dough hook attachment and knead the dough on medium speed for about 5 minutes or until it becomes smooth and elastic.

  • Divide the dough into 4 equal portions and wrap each portion in plastic wrap. Let the dough rest for at least 30 minutes at room temperature.

  • Once the dough has rested, attach the pasta roller attachment to your KitchenAid mixer. Take one of the portions of dough and flatten it with your hands until it is about 1/2 inch thick.

  • Set the pasta roller attachment to the widest setting and run the dough through the rollers. Fold the dough in half and run it through the rollers again. Repeat this process several times until the dough becomes smooth and elastic.

  • Adjust the pasta roller attachment to the next thinnest setting and run the dough through the rollers. Repeat this process, adjusting the rollers to a thinner setting each time, until the dough is rolled to the desired thickness.

  • Once the dough is rolled out to the desired thickness, attach the pasta cutter attachment to your KitchenAid mixer. Run the sheet of dough through the pasta cutter to create your desired shape of noodles.

  • Once the noodles are cut, you can cook them immediately or let them air dry for long term storage.

  • To cook the noodles, bring a large pot of salted water to a boil. Add the noodles and cook for 2-3 minutes or until they float to the surface.

  • Drain the noodles and serve them immediately with your favorite sauce or toppings.
