Yummy Banana Chocolate Chip Loaf

Do you often end up with overripe bananas in your fruit bowl and wonder what to do with them? Make this delicious Healthy Banana Chocolate Chip Loaf - it's delicious.

I have to say it happens pretty often in this household. I like my bananas pretty unripe, where the skin is still a little green and they are just starting to go yellow and my kids are exactly the same. So once they end up all yellow, with an odd black spot, you can guarantee they will not be touched by any of us and then. I then have several banana's I need to find a recipe to use them in. So having a yummy healthy recipe on hand like this is a must.

The smell that fills the kitchen as this is baking is amazing and once out of the oven, I can never get the kids to wait for this to cool down before grabbing a slice. They love it.

What size loaf tin do I need for the Banana and Chocolate Chips Loaf?

I use a 8x4.5 inches loaf pan, it's one that is a perfect rectangle, which means that when it comes to slicing up the loaf is easy to get to perfect sized slices.

I always line the baking tray with parchment paper to ensure it is easy to remove once baked. Nothing worse than trying to remove a cake from the tin and discovering it is stuck. Which with baking that doesn't use a lot of fat will definitely happen.

Substitute for Chocolate Chips

I use milk chocolate chips or occasionally semi-sweet as these are what the kids prefer, they are not keen on dark chocolate. But if you want to use dark chocolate chips, then feel free to make the swap.

I do not recommend omitting the chocolate chips altogether as they add to the sweetness, and as we don't use a great amount of maple syrup, you will lose a lot of the sweetness if you omit those chocolate chips.

If you are not keen on chocolate then raisins (sultanas) are a great substitute, I would add in a pinch of cinnamon too if you like it to compliment the flavour.

Can I use Sweetener?

I use all-natural healthy ingredients in this recipe because it's one I make often for the whole family.This banana and chocolate chip loaf has no sweeteners, nothing artificial, and all ingredients you can identify and expect to see in a real cake. Which is important to me when it comes to recipes the kids are going to eat.

I also have to stop here and say, when I am going to use calories on a cake, I would much rather use a few more calories, for good natural ingredients where it tastes like real cake. I am not super keen on recipes that use half a dozen eggs and very little other ingredients, I've made them, eaten them, but I can honestly say it never really tastes like a real cake. There are a couple that is ok but for me, banana and chocolate chip loaf has to be the real thing or nothing at all.

Plus the maple syrup is a wet ingredient, so if you use sweetener you won't get the same bake or taste.For that reason, I don't recommend using sweetener, sometimes you just have to use the real ingredients.

If you don't have maple syrup, then honey is a good replacement.

Can you freeze the Banana Chocolate Chip Loaf?

If you don't want to be tempted to eat more than your should of this Banana and Chocolate Chips Loaf because seriously, this is darn good.

Then once sliced up into servings, freeze the other slices by popping them into a freezer bag or lidded tub with some squares of wax proof paper in between each slice.

The wax proof paper will stop the slices from sticking together, meaning it is easier to take out just one slice as you want it.

Healthy Banana Chocolate Chip Loaf

Delicious Healthy Banana and Chocolate Chip Loaf - all naturalingredients and no compromising on taste.

Ingredients

  • 160g (5.6oz) of plain flour
  • 1 teaspoon of baking powder
  • ½ teaspoon of bicarbonate of soda
  • 1 teaspoon of vanilla essence
  • 180g (6.3oz) of ripe bananas
  • 1 tbs of unsalted butter or coconut oil (melted)
  • 2 tablespoons of maple syrup
  • 30g of milk chocolate chips (or dairy free chocolate chips)
  • 2 large eggs

Instructions

  1. Preheat oven to 180c or 350f (gas mark 4)
  2. Sieve flour, baking powder and soda into a large bowl.
  3. In a separate bowl mash the banana and then whisk in the melted butter (or coconut oil), maple syrup and vanilla essence and then gradually beat in the eggs.
  4. Fold in the dry ingredients and 20g of the chocolate chips
  5. aLine a loaf tin with some baking paper and pour in the mixture. Sprinkle on top the remaining 10g of chocolate chips.p
  6. Bake in the oven for approx 40 mins, until a wooden skewer inserted in the centre, comes out clean.
  7. Allow to cool and then slice and serve.
