Easy Raspberry Cheese Danish Recipe

I used store-bought puff pastry dough to make this a quick dessert recipe. However, if you want to go above and beyond you can make this using my homemade danish dough recipe here on the blog. For this cheese danish recipe, I prefer using a faster method. I almost always have these ingredients at home so this pastry can be whipped up very quickly (about 20 minutes) besides the baking time. This is also something I like to serve when having unexpected guests. It looks like it took a long time to make when in reality it’s just as quick as making cookies.

  • Puff Pastry Sheets
  • Cream Cheese
  • Ricotta Cheese
  • Sugar
  • Lemon Juice
  • Raspberry Jam
  • Egg
  • Milk
  • Powdered Sugar

How to make a Cream Cheese Danish with Raspberry Filling

  • Prepare your baking sheet with parchment paper and preheat your oven as needed.
  • In a bowl, you will combine your cream cheese danish filling mixture and mix with a handheld mixer until well blended, leaving raspberry jam out until later.
  • You will cut the puff pastry as shown, and layer your raspberry jam and cream cheese danish filling as appropriate before braiding and topping with an egg wash to bake.
  • Top with a drizzle of glaze if desired.

Ingredients

  • 2 puff pastry sheet
  • 8 oz cream cheese
  • 6 tbsp ricotta cheese
  • 4 tbsp sugar
  • 1 tsp lemon juice
  • 1/2 cup raspberry jam
  • 1 Egg + 1 tbsp water for egg wash
  • Glaze:
  • 1 tbsp milk
  • 1/2 cup powdered sugar

Instructions

  • Combine cream cheese, ricotta, sugar, and lemon juice with a handheld mixer.

  • Place the thawed puff pastry out onto a sheet of floured parchment paper. Roll it out lengthwise about 2 inches.

  • Cut the top corners off and begin cutting strips diagonally down the sides of the pastry. You should end up with about 10 strips on each side. Once you reach the bottom strip, cut off the remaining flaps.

  • Place the filling in the middle third of each puff pastry sheet. Then pipe out an even layer of raspberry jam on top of the filling (1/4 cup per danish ).

  • To make the braid, begin crossing over each strip, alternating between sides. Every time you pull a strip over to the opposite side, gently pinch it down. Before you cross over last strips, fold in the bottom middle flap.

  • Brush both danishes with egg wash. Bake at 400 degrees Fahrenheit for 20 minute or until golden brown.

  • Make the glaze by combining the milk and powdered sugar. Once the danish is completely cool, drizzle the glaze over it.

    Thank you for the recipe. Step 2 is kind of confusing though –

    Do we mean 12 or 20 inches?

      Hi, thank you for asking. What I meant is to roll out the dough 2 inches wider than what it came in the package. It should be about 9×11 inches after its rolled out. I hope that helps 🙂

    My question and I apologize if it has been asked, but can I freeze these for the holidays and before or after it’s baked? Thanks!

      Thank you Mary! 🙂 You can freeze them before baking. Just make them up until before the egg wash. Then wrap them well in plastic wrap and foil and freeze. Thaw completely before eggwash and baking. Enjoy!

    Hi Dina: Thank you for making it easy to make what seems to be such a difficult bakery product!! I’d like your opinion: I want to add lemon curd instead of jam, but want to take the edge off the lemon sourness by incorporating some whipped cream into the curd. Do you think this will make a mess or really work? Thank you for your expertise! barb.

      Hi Barbara 🙂 Thank you and I hope you find this recipe easy to make! I don’t recommend whipped cream because it will liquify with the heat. To balance the tartness from the lemon you can add some more sweetness from the glaze. I hope that helps. If you give it a try let me know how it goes 🙂

      Hi Kara 🙂 You can omit the ricotta cheese. You can add a large egg yolk to help thicken it up. It would be the filling from my cream cheese danish recipe. It doesn’t have ricotta cheese. I hope that helps 🙂

      Hi Jean 🙂 I am not too sure what they mean but I am assuming they added cut raspberries. Half of the berries on the inside of the danish and the other half on top of the danish. I hope they answer you to clarify. I hope you get a chance to try this recipe! 🙂

      The raspberry user meant they used raspberries but used half on the inside and set aside the other half and used them on the top of the pastry when it was done baking.. Some people use the word cut as setting to the side..That is my interpretation…

      Hi Maxine 🙂 Technically it should work. However, it may leak some juices from the raspberries since the jam is thickened. So the consistency may be a little thinner. If you give it a try let me know how it goes 🙂 I hope you love this recipe!
